Whether it is a last-minute gathering by the pool, a quick lunch, or just a case of the munchies, there are many occasions when you need to whip up something tasty and quick. Enter these irresistible Blue Cheese Popovers! With maximum decadence, minimal prep time, and a handful of ingredients, these popovers are a crowd-pleaser. Enjoy Blue Cheese Popovers on their own or pair them with cold cuts, fruits, veggies, or other snacks.
California produces exquisite blue cheeses, so we will recommend a few locally-produced varieties along the journey, and even beyond our State.
Blue Cheese Popovers Recipe (Excellent to Share)
PREP TIME: Under 10 minutes
COOK TIME: 20 minutes
SPECIAL EQUIPMENT: 2 Non-Stick Mini Muffin Pans (12 cups each)
Ingredients
1 cup all-purpose flour
1 tablespoon of fresh parsley, finely chopped (if you don’t like parsley, skip it, or add an equal amount of chives instead)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup of your favorite blue cheese, crumbled
1 1/4 cup milk
2 eggs
1 tablespoon of unsalted butter, melted
Vegetable oil, for brushing the pans
Instructions
1) Preheat the oven to 450 degrees Fahrenheit, with the oven rack placed in the middle or in the bottom third of the oven.
2) In a large bowl, mix dry ingredients: flour, salt, pepper, and herbs (parsley or chives)
3) In another large bowl, whisk wet ingredients: milk, eggs, and melted butter.
4) Pour the wet ingredients into the bowl with the dry ingredients and mix until well blended.
5) Brush your non-stick mini muffin pans with vegetable oil. A bit of it might remain on the bottom, and that’s OK.
6) Spoon or pour the batter into each of the mini muffin cups, filling them to about 1/4 inch below the rim of the pan.
7) Carefully place a teaspoon of crumbled blue cheese into the center of each mini muffin cup, ensuring they don’t overflow.
8) Place the pans into the oven and bake for 10 minutes. Do not open the oven door while baking!
9)Reduce heat to 350 degrees Fahrenheit and bake for an additional 8-10 minutes until the popovers are puffed and golden brown.
10) Remove the blue cheese popovers from the oven and transfer them to a napkin-lined bowl or platter.
11) Easy Peasy Blue Cheesy 😊! Enjoy!

2) Bay Blue: Produced by Point Reyes Farmstead Cheese Company as well, Bay Blue is another notable California blue cheese. It is aged for 90 days, resulting in a smooth and approachable blue cheese.
Central Coast Creamery, California
3) Big Rock Blue: Produced by Central Coast Creamery in Paso Robles, California, Big Rock Blue is a mild blue cheese, named after Morro Rock in Morro Bay. Paso Robles is an excellent weekend destination for culinary and wine enthusiasts, only 2.5 hours away from the San Francisco Bay Area. During one of our visits to Paso Robles, we discovered a blue cheese and Merlot grape jelly spread, served with butter crackers. Sounds weird, right? Well, the taste combination was amazing!
Rogue Creamery, Oregon
4) All nine varieties of Blue Cheese by Rogue Creamery in Oregon. We had a chance to visit their shop on a coastal road trip from California to Oregon, and this place has rocked since 1933. Their Rogue River Blue was crowned as “World’s Champion” at the World Cheese Awards in Italy, in 2020 — the first time an American cheese has received this prestigious award.
Wherever you are — it’s always worth exploring local cheese shops and farmer’s markets to discover new and unique blue cheeses made in your area. In a pinch, a tasty crumbled blue cheese from a local grocery store works just as well. As you saw in our photos — we used the one from Trader Joe’s this time and it was perfectly fine.
