Now that we’re all spending more time at home, it seems many of us have been polishing our baking skills. Digging out those old recipes hidden away in the back of the drawer, trying to recreate a childhood favorite, or going online to find something completely new. Whichever it is, any time spent in the kitchen is time well spent!
Guess what? You don’t have to be a baker to make decadent cookies at home! This easy no-bake chocolate oatmeal peanut butter cookie recipe has always taken me back to when I was a kid. My mom would make these blob cookies for me and my brothers, while we argued over who gets to lick the pan. It was always the perfect way to spend a rainy afternoon.
I had almost forgotten about the cookies, until a few years ago when I stumbled across a recipe in an old cookbook. When I opened the dessert section, I was delightfully surprised to find the exact recipe my mom used for these tasty chocolate blobby nuggets! We’ve been making them ever since, and love to share them with our neighbors or take them to parties. These chocolate oatmeal cookies are always a hit, so we thought it’d be fun to share them with you too in this ‘Fun Projects” category of our posts.
The best part about these cookies is that they’re super easy to whip up and only require a few ingredients. No Baking required. No Flour or Eggs necessary.
If you’re lucky, these blob cookies will come out perfect on your first attempt. For me, it took a few tries to get the timing right. With these simple instructions you’ll be making them all the time!
OK, now that’s out of the way, let’s get started!
Ingredients
As I mentioned, there are only a few ingredients:
1/2 cup (one stick) Butter
2 Cups Sugar
4 Tablespoons unsweetened Cocoa Powder
1/2 Cup Milk
2 Cups Oatmeal (Old Fashion works best, but Quick Oats are fine)
1/2 Cup Chunky Peanut Butter
1/2 Teaspoon Vanilla extract (optional)
Instructions
Here are my step-by-step instructions. Make sure to check out the handy tips along the way for the best chocolate blob cookie-making experience! 🙂
- Before you start cooking, measure out the oatmeal and peanut butter and set them aside, separately. Also, spread a 2-foot-long (or a little longer) piece of foil on the counter.
2. In a medium saucepan, combine sugar and cocoa powder (break up any clumps). Add milk, and mix until blended, then add butter (TIP: Butter can be cubed, but a little melted is better.).
3. On medium heat, bring mixture to a rolling boil, stirring occasionally. Give it one more good stir, and let it boil undisturbed for 1 minute. (TIP: When bringing the mixture to a rolling boil, it may be difficult to judge when to start timing the 1 minute. Not enough time, they will not harden. Too much time, they’ll harden too quickly.)
4. After 1 minute, remove the pan from heat and quickly add peanut butter and vanilla extract, mix it until dissolved.
5. Next, add oatmeal to the pot and mix well. If you like it extra oat-mealy, you can add 1/4 cup extra. But too much of it will dry them out. (TIP: Once you add the oatmeal, you can always put the pot back on the heat for a few more seconds, stirring constantly. Maybe add a pinch more oatmeal. This will often help if you feel the mixture is too ‘runny’.)
6. With a large spoon, plop hot mixture onto the foil in 1-1/2″ to 2″ round blobs. (TIP: When spooning onto foil, the mixture should form a little mound, not be flattened out. EXTRA TIP: Once you remove from heat, mixture will begin hardening quickly, so don’t diddle-daddle with the blobbing.)
7. Leave cookies alone for an hour or until they have completely hardened. Refrigerate in a sealer container, preferably overnight.
